Being one of the first plants to have been cultivated by humans, Garlic is a herb that has been used as both a food and a medicine for thousands of years.
Records of its use in India and China date back 5000 and 3000 years respectively. The Sumerians in Palestine used garlic from 2600-2100 BC, and it appears in the Egyptian Codex Ebers of 1550 BC. Its use was widespread throughout the Mediterranean from 1850 BC in countries including Greece and Tukey and also in the Slavic regions of Europe.
More recently, the medicinal value of garlic has been recognised by Louis Pasteur (1822-1895), and army medics during WW1 and WW2.
The main pharmacological actions of the herb are attributed to its organosulphur compounds (OSCs): allicin, alliin, allyl cysteine, allyl disulfide, S-allylcysteine and S-allylmercaptocysteine.
